Wine Storage


Wine making and proper storage techniques have been around for centuries. The process of wine making is complicated and lengthy, but the process of storing the wine to maintain its quality and taste is just as important and difficult.

It doesn't matter how good a wine is or how much of maturing potential it has, because unless stored correctly, these features may prove futile. It is generally thought that a cool place in the garage or the back of the basement is ideal for storage, but in reality very few places actually possess the perfect conditions for wine storage.

Ideal storage conditions are cool (around 55 degrees Fahrenheit), not subject to extreme fluctuations in temperature, not too dry (to avoid the corks from drying out) and not too damp. A relative humidity of around 70% is generally recommended so as to keep the corks in good resilient condition and thereby prevent them from shrinking. More important than the actual temperature of wine storage is the degree and rapidity of temperature fluctuation that the wine is subjected to. A gradual change of temperature of ten or so degrees between seasons is not a matter of great concern. But this kind of fluctuation on a daily or weekly basis will cause damage to the wines and cause them to age prematurely.

It is necessary that wines should be stored in an area free from harsh light and vibrations. Bright light can prematurely age a bottle of wine. Clear bottles are more susceptible to damage but ultra violet light can penetrate even dark-colored bottles. Once a bottle of wine is laid down, it should preferably stay there until it is opened. Here�s an easy checklist of subsequent questions to ask yourself as you taste to purchase, whether for yourself or for a hotel/restaurant property: "Is this wine a good example of type, or is it a new example of type? Can I sell this to my guests? Is there a market for this wine, or can I create one? Is it delicious, will it deliver pleasure at the table? Is there a good price/value relationship, what will I have to sell it for? And, finally, once again, is this good wine?" This simple methodology, practiced faithfully, will become second nature and will keep your palate honest.

Be careful about temperature. I drink white wine around 48-55� F and red wine around 60-65� F. If you drink wine that's too warm or too cold you lose all the fruit flavors and the complexities of the wine.

Your first inclination is to taste your sample. Stop for a second and look at the wine. Tilt the glass and look at it against a white background. A shirtsleeve will do in a pinch. What do you see? Red wines vary greatly in color. As they age, you will see hints of reddish-brown around the edges. White wines become more golden as they age. Generally speaking, the darker the wine, the more full-bodied the taste.

Temperature
Temperature is by far the more important of the two factors to watch. The "golden temperature" for wine is 55�F. Wine should normally be stored between 50-60�F, although a range of 45-65�F is considered OK and the most easily maintained by the normal collector. A lower, colder temperature causes the aging process to slow down, preventing the wine from aging properly. A higher, warmer temperature causes premature aging, although not in a "good" way. You cannot just put a bottle of wine in a desert and cause it to age 20 years!
